So where does Whey come from?

How are whey protein powders made?
The proteins from whey are extracted several different ways, some are expensive and some are cheaper.
You'll see these terms on the labels of Whey Proteins … Ion Exchange, Whey Isolate, Whey Concentrate, Hydrolyzed Whey, Denatured Whey and Peptides .
• Whey Isolate means the process has 'isolated' the whey and has taken almost everything else out.
This is done with filters (good ), microfilters ( better ), ultramicrofilters (best) and CFM (Cross Flow Microfiltration). These filters remove almost all the fat, cholesterol, and milk sugar (called lactose). In other words they have 'isolated' whey's amino acids.
Whey Isolate is the purest, higher quality protein and the most expensive.
• Whey Concentrate, on the other hand, leaves more Lactose, cholesterol and fat in the powder.
The proteins are taken out of the whey using an Ion Exchange process, which uses chemicals and heat to separate out the amino acids.
This destroys some of the amino acids and is called denatured protein, but the protein is now more affordable!
• Peptides are simply short chains of amino acids that are easier to digested, and are also called hydrolyzed proteins and which have a bitter taste.
If you are Lactose or dairy sensitive you may want to avoid these types of proteins altogether.
- At least stay with the whey isolates. Keep in mind that a whey isolate will have less lactose than a whey concentrate.
- Pay attention to the amount of sugars in these proteins, since they are most likely Lactose!
- You may have to call the manufacturer for details. I called one manufacturer and asked if the sugar in their whey was Lactose … but all he would say was that the sugar was a naturally occurring sugar. I pressed the point and was transferred to a "technician" who confirmed the sugar in their whey protein was indeed lactose.
- Keep in mind that a whey isolate will have less lactose than a whey concentrate.
